We had this Bourbon Chicken for dinner last night and it came out really tasty. Chicken thighs are cheap and all of the ingredients most people have in the pantry/fridge without having to run to the store. There was enough for a yummy leftover lunch for work.
Bourbon Chicken Recipe
- 6 boneless skinless chicken thighs
- 1/2 c apple juice
- 1/4 t ginger
- 1/3 c soy sauce
- 1/2 c water
- 3 cloves minced fresh garlic
- 2 T apple cider vinegar
- 2 T ketchup
- 1/4 c packed light brown sugar
- 2 T honey
Grill the thighs on low to get a few grill marks and start the cooking process. Combine all other ingredients (apple juice, ginger, soy sauce, water, garlic, vinegar, ketchup, brown sugar, honey). Place the chicken in the crock pot and pour the sauce over. Cook on low for 8 hours or on high for 4 hours. If you need/want to thicken the sauce, pour into a saucepan and add some cornstarch. Stir and bring to a boil until your desired thickness. Pull the chicken out of the crock pot and slice in rough pieces (like they serve in the mall food court).
Cook up some rice and veggies, grab some chicken and pour some delicious sauce over & enjoy!
I doubled my sauce recipe because I’m obsessed with sauces like this but there isn’t a need for it unless you want to. The original recipe I was using was a little bit different – I made some of my own additions – extra garlic and honey. You can also add real bourbon into this but I wasn’t going to the store for that and the flavor is just as good.
Devin had requested mashed potatoes to go with this, which isn’t the normal side dish, but the sauce with the potatoes was actually really good. I forgot to take a picture of it plated because I was pretty hungry at this point but it was yummy and I didn’t have to go to the mall to get that bourbon chicken taste!
